To change page numbers, you would first have to remove the old page numbers - as far as the PDF file is concerned, your page numbers are very likely not marked in a way that it "knows" what a page number is (that depends on how the file was generated). If you are not dealing with document security, then removing pages is not a problem: Open the document and then open up the Pages navigation pane (View>Navigation Panels>Pages), then you right-click on a page that you want to remove and select "Delete Pages".
